My Easy, Go To Recipes for Fall

I am not a food blogger. I am not even someone who enjoys cooking all that much. I’d much rather spend my time reading! But I do love entertaining and I love meal planning. So I’m choosing recipes, my goal is to find tasty, hearty meals that are easy to prepare and don’t take a ton of time. I also look for recipes with use similar bases and similar ingredients so I don’t overbuy produce, meat, etc.

When it comes to Fall meals, I love to cook meals that are colorful, hearty, and packed with nutrients without skipping out on the comfort aspect. We love soups and stews and warm “bowl meals” we call them. Here are five of the go to recipes I’ve been making that also have great leftovers and we never tire of.

I like to think I’m a pretty normal person so I hope these recipes that we’ve found and sourced throughout the years are helpful to you so you can spend your free time doing what makes you happy and not cleaning the kitchen in all your free time.

Greek Chicken Meatballs

This is a new to me recipe! We LOVE Greek food and a souvlaki is one of our favorite things to order from our favorite Greek restaurants but it never tastes the same when I make it at home. These meatballs are so easy and elevate a simple at home salad.

A household favorite from Clare for the last 2+ years. I get dough from Trader Joe’s to make it even easier!

Chicken Pot Pie Pasta

This one is so.good. Nick craves it year round and it makes an appearance often during the Winter months for us! It can be made gluten/dairy free too if you need!

Italian Wedding Soup

The secret to my Italian Wedding Soup is adding tortellini. It makes it extra hearty and filling. Sometimes we’ll replace the meatballs with crumbled sausage if we want a little kick.

Maple Mustard Chicken

This is my favorite marinade to use on chicken and fav recipe to doctor depending on what we have. We’ll replace the sprouts with broccoli, sometimes I’ve done asparagus. It’s a really versatile recipe and good on salmon as well!
