Recipe of the Week: Easy Italian (Postponed) Wedding Soup
My favorite comfort meal is soup. I used to have it every day when I was in pre-school. I’d come home and have soup while watching Little Bear with my mom. In the cold winter months, like most others, I crave that nostalgia and warmth.
Early in January, Nick announced that he was going to make Italian Wedding Soup. We didn’t have all of the ingredients, but he was determined to make me the soup. I was sad (what else is new in pandemic life) and tired. He grabbed the stir fry veggies we had in the freezer, some frozen spinach, and the ground turkey I had intended to use in a meat sauce.
He broke up some leftover lasagna noodles and magically made this hodge podge of ingredients delicious. We enjoyed it, calling in Italian Postponed Wedding Soup, since it wasn’t perfect but filled with love. And you know, our wedding has been postponed and won’t be perfect, but definitely filled with love.
However, here is my real recipe. It is so easy and SO good.
Ingredients:
Chicken or Veggie Broth—2 cups
Water-2 cups
Olive Oil—1 tbsp
Spinach or Escarole—Whole package
Carrots—1 cup, sliced
Celery—1 1/2 cups, sliced
Yellow Onion—1 cup, sliced
Salt—1 Tbsp
Pepper—1/2 tbsp
Garlic Powder—1 tbsp
Meatballs—Our homemade recipe will be below
Tortellini
Directions:
Chop veggies into desired size (I like them small and thin) and add to your soup pot with olive oil. Allow to cook through 5-6 mins or until onions and celery are translucent. Add broth and water. You can adjust this to your desired amount, we like to make a large pot so we can freeze half.
While that is simmering, add meatballs to a pan with olive oil until they are browned. They don’t have to be fully cooked, as the broth will finish them off. Once browned, add to the soup pot.
Once meatballs are cooked through, add your tortellini! Tortellini is done when it all floats to the top.
Serve with a little parmesan on top and enjoy!
Meatballs:
We use ground turkey cause I don’t eat red meat, but this would delicious with sausage or ground beef!
Ground turkey
Salt 1 tsp
Pepper 1/2 tsp
Minced Garlic 1 tsp
Onion Powder 1/2 tsp
Bread Crumbs 3/4 cup—We like to use panko crumbs but whatever you have!
Combine in a bowl and roll into 1/2 inch size balls.
