Blogmas: 2 Simple Christmas Desserts

I love to bake, especially during the fall and winter. It has always been something I was drawn to growing up. Plus, the food network is AMAZING this time of year. I love all the Christmas challenge shows, especially the gingerbread houses! And the Great British Baking Show because I’m not a monster. 

I also had a number of requests to share these recipes since I’ve mentioned them here and on my Instagram story! They are both INCREDIBLY simple and isn’t that what’s most important during this hectic time of year? 

Pumpkin Chocolate Chip Cookies—I can’t take credit for this one! My friend Dorothy shared this recipe a few years ago and it has become a staple in our house. I tweak it a little bit by adding extra flour. Probably 2-3 small handfuls to soak up the extra moisture so the cookies don’t spread as much! 

Nick loves them so much he’s requested them instead of cake for his birthday the last two years! 

Icebox cake—This is a CLASSIC in our house and so easy to make. My Papa used to make it every Christmas and I took it over when he passed away. It’s so simple. All you need is two ingredients:

-1 package of FAMOUS chocolate wafer cookies 

-Homemade whipped cream (yes, it makes a difference!)

Layer the whipped cream and chocolate wafers on a plate. Use thin layers and then use remaining whipped cream to cover the “log”! Garnish with cinnamon dots and green sugar sprinkles. Refrigerate overnight and serve!
