My 5 Favorite Easy Fall Recipes

I am someone who loves to cook and bake, but I don’t like to follow directions. I know, it’s a conundrum. So when I’m looking for recipes, I look for minimal ingredients and “one pot” meals for easy clean up. These are 5 of my favorite EASY recipes to make when the temperature drops.

Game Day Chili Bar

It’s no secret we love a good game day spread. I love making a big batch of chili for lunches throughout the week so on Sunday, we’ll make a fresh batch and then make a spread of fun things to add in. Our favs are: sour cream, cheese, bell peppers, jalapenos, corn chips, tater tots, goldfish, green onions.

My Chili Recipe:

-Two Cans Whole Peeled Tomatoes

-Two Cans Red Kidney Neans

-1 Can Tomato Paste

-1/2 Red Onion, diced

-4 Large Carrots, chopped

-Spices: 1 TBSP paprika, 1/4 TSP red pepper flakes (omit for less spicy), 1/2 TSP pepper, 2 TBSP chili powder, 1 TSP cumin, 1/2 TSP salt, 1/2 TSP turmeric, 1 TBSP minced garlic

-1 package Ground Turkey (or chicken or beef, whatever you prefer!)

-1 cup water

To Make:

-Saute onions and carrots with a tablespoon of oil for 2-3 mins, add brown turkey and cook until brown. Set aside.

-Add tomatoes, beans, tomato paste, spices and water to crockpot. Set on high.

-Add in ground turkey veggies, stir.

-Cook on high for 4-6 hours

-Serve with add ins!

Buffalo Chicken Dip

My very favorite and we have it all year round but It’s perfect for football season.

-4 chicken breasts, cooked and shredded

-1 package softened cream cheese

-1/2 cup Frank’s RedHot Sauce

-1/2 cup ranch dressing

-1/2 blue cheese crumbles (optional)

To Make:

-Mix all the ingredients in a large bowl and add to a large baking dish

-Bake for 20 mins at 350 degrees

-Sprinkle with green onions, serve with baguette slices, celery and carrots, tortilla chips, whatever!

Chicken Pot Pie Pasta

I use this recipe from my friend Nora! We don’t make it dairy free though!

Italian (Postponed) Wedding Soup

I shared this recipe last winter and I am already so excited to make it again!

Easy Vegetable Soup

Another soup that is so easy. Have you noticed I like “throw it all in a pot and let it do it’s thing” recipes?

1 quart Veggie Broth

1 TBSP Olive Oil

2 cups chopped celery

2 cups chopped carrotts

1/2 a white onion, chopped

1 can kidney beans

1 bay leaf, 1 TSP salt, 1 /2 TSP pepper, 1 TBSP garlic powder

Optional: shredded chicken, ground sausage, 1 package noodles

To Make:

Add veggies and oil to the bottom of your pot, saute until onion is fragrant. Add broth and bring to a boil. Reduce heat to a simmer, cook until carrots are soft.

I like to use this as a base and then we add whatever we want! You can use any kind of pasta you want or protein!
