Weekly Wrap Up 9/3/21
We had the BEST weekend in Connecticut with my family. I was so sad to leave because with the rise of more variants in the US and people still refusing to get vaccinated, I’m nervous for what the Fall and Winter will bring. While Nick and I enjoyed our low key holidays last year (the first time neither of us had to travel), I would really like to see my family for the holidays this year. I don’t know, it’s all I had on my mind as we drove away.
I know this was a tough week for so many. I’m thinking of everyone who were affected by the truly terrible weather caused by Ida. I was so worried about my parents and friends and family in the path of the storm.
But it was a great week once we got home too. Beasley was happy to home and I read some great books. Plus I got to have an afternoon with my best friend and do some Fall shopping. We had beautiful weather and can definitely feel the air beginning to get crisper. If you’re looking to escape reality this weekend, don’t forget I’m hosting a #ReadIntoAutumn readathon!

Recipe of the Week:
This is very small and very random, but we actually love the TIkTok Feta pasta that went viral over the winter and make it at least once a week. I use brown rice pasta from Trader Joe’s and for the first time added their Sundried Tomato chicken sausage in. It was a game changer and a great way to add a little more protein to the meal!

It’s a long weekend! I’m hosting a little Readathon (more info here if you are interested!) and we’re going to have a great long weekend! We’re going to the beach one day and will be getting in the last days at the pool before it closes for the season Tuesday!
