Recipe of the Week: Caprese Pasta

My favorite part of 2020 was actually having time to cook at home. I have always loved to cook but meal prepping can be boring for me because once I find a recipe that works, I just stick with it! But last year, I really got into cooking and creating easy, flavorful recipes that we’d be excited to have each evening.

One of those is my Caprese pasta! It’s not rocket science but it’s easy, colorful, and can served hot or cold. I’m excited to bring it with us to some outdoor parties and barbecues this summer but it makes a great easy Sunday meal at home as well!

The best part is that you can take the basic recipe and doctor it up however you please! We like to add balsamic glazed grilled chicken but I think it would also be delicious with some grilled shrimp!

Another fun way to make this recipe unique is to use marinated mozzarella. My favorite is to let the mozzarella hang out in some lemon basil infused olive oil for a couple hours before I make the pasta. It gives it a fresh zing for the summer time!
