Recipe of the Week: Mediterranean Grain Bowl

Happy Weekend! I’m launching a new series on the blog where every Sunday, I’ll share a my recipe of the week! We’ve gotten a little lazy with the winter blues over here and three weeks ago decided to try one new recipe a week. It’s been so fun and I’ve gotten some requests to share more recipes, so here we go!

I love cooking but hate clean up. I like my meals to simple, hearty, and healthy. Today’s first Installment hits all those boxes!

My best friend has moved to the same area as us and even though we can’t spend time together for Covid safety, we’ve gotten creative with how we get a little friend time in. Over the weekend, he brought us lunch from Panera so we could chat, masked, outside for a little bit. It was cold and we live very far north so it didn’t last long, BUT he did bring me a delicious salad that I knew I had to recreate after one bite.

I love Greek salads. One of our favorite restaurants is called Kostas and they have the BEST Souvlaki. I love feta cheese, fresh cucumbers and tomatoes, spicy red onion, the works! This Mediterranean Grain Bowl takes the Greek Salad so another level.

Ingredients:

Ancient Grains—I love Trader Joe’s version. But you can also use Couscous or Quinoa.

Arugula

Cucumbers

Tomatoes

Olives—I like kalamata olives in my Greek salads

Feta Crumbles

Hummus—I like Trader Joe’s Garlic but homemade or red pepper would be yummy!

Olive Oil or a Greek Style Dressing

Directions:

Cook your ancient grains according to the packaging and set aside. Plate your greens and top with sliced cucumbers, tomatoes, and olives.

Add your grains (hot or cold—I’ve done both and both are delicious). Top with a dollop of hummus, around 2 tablespoons and sprinkle with feta crumbles. Drizzle with a little, like a LITTLE (maybe a teaspoon) of olive oil or greek dressing/balsamic vinegar just to give it a little tang and movement. I stir it all together and could eat it for lunch every day!

I like to use a deep plate, one that is almost a bowl but not quite to make mine! Here are some options.
